White chocolate dipped Apricots. Healthy treat for School
Planning a lunch box treat for kids can be challenging. It has to be healthy, yummy, easy to assemble, keeping in mind any dietary restrictions. Repetition won’t go well. The menu may need a change depending on what the popular TV character’s latest preference is or even the content of a friend’s lunch box.
This is not an easy task. With both parents working, kids activity in the evenings, time is the essence.
I was discussing options for lunch box treats, with Cori, my daughter in law, when she suggested this idea. I gave it a try. It was ready in no time. Full of fibre, antioxidants, Apricots are a rich source of beta carotene, Vitamins A, C, E, and K. The dried ones have a longer shelf life too. There is no added sugar in the recipe. Finally it is also Gluten free and Vegan. A win win situation for all.

Dried Apricots 450 gms box
White chocolate 1/3 cup
Coconut oil 1 Tbsp
Chopped Pistachios 2 Tbsps
Put the chocolate pieces and Coconut oil in a heatproof bowl and then place it on a double boiler on high heat.
Wait till the Chocolate melts and forms a smooth paste.
Remove and keep the bowl aside to cool.
Take the chopped Pistachios in another bowl.
Use a tong to grab the dried Apricots, dip then in the Chocolate mixture half way through, such that a bit of Apricot is still visible. Dip the Chocolate covered portion into the chopped Pistachios. Collect them in a small plate.
Let them sit inside the fridge for half hour.
I have used the Sun dried Turkish pitted Apricots from “Trophy”.
The above Chocolate mixture was sufficient to coat half the amount of Apricots in the box.
