Skinned black beans and almond milk popsicles. GF. VG option

Picnics  and  popsicles  can’t  stay   far apart.  With  a  short  summer  as  is  in  the  prairies,  picnics  and  barbecues  are  quite  common.

Badam  Doodh  or  milk  with  nuts  and   spices  are  quite  common  in  India,  both  as  a  hot  beverage  as  well  as  cold.  Flavoured  with  saffron,  cardamom,  rose  petals,  textured   with  pistachios  and  almond  pieces  this  drink  is  enjoyed  in  festivals  like  Diwali  or  Holi  or  even  when  celebrating  an  important  milestone  in  one’s  life.

Although  mostly  made  from  cow’s  milk,  I  have  chosen  to  use  almond  milk  here.  There  is  another change  that  I  have made  too.  I  have  added  boiled and  mashed  skinned  black  beans  with  the  milk.  Apart  from  contributing to  the  protein  content,  the  creamy  nature  of  the  beans  give  a  richer  consistency  without  resorting  to  heavy  cream  etc.

Sipping  it  as  a  beverage  is  good.  How  about  making  them  into  Popsicles,  Paletas  or  Ice  creams?  Licking  and  slurping  the  popsicles  from  the  fingers  and  elbows  on  a  hot  summer  day  is  much  more  fun  than  drinking   the  milk  mixture,  wouldn’t  you  agree?

Recipe:  Made  10

Ingredients;

Almond  milk                                                                          1  cup

Boiled  pureed  beans                                                       1    cup

Honey  or  agave  syrup  for  VG                             3  Tbsps

Pistachio  pieces                                                                1 Tbsp

Almond  pieces                                                                     1  Tbs

Saffron                                                                                        1  big  pinch

Cardamom  powder                                                           1/4  Tsp

For  the  coating,

Coconut  oil                                                        1/4  cup

Cacao  powder                                               1/4  cup

Honey  or  agave  syrup                           2  tbsp

Pistachio  pieces                                        1  Tbsp

Method;

Bring  the  milk  to  a  boil  in  a  saucepan  over  medium  heat.  Add  the rest  of  the  ingredients.  Bring  the  heat  down  to  low  and  simmer  for  about  10  minutes.  Put  the  gas  off  and  let  the  milk  mixture  cool  down.

Pour  this  in  popsicle  molds  and  freeze  overnight.

Combine  the  ingredients  listed  under  coating  except  the  nuts  on  a  double  boiler.  When  mixed  well,  pour  it  in  a  mug  and  let  it  cool  down.

Take  the  popsicles  out  from  the  mold ,  carefully  dip  in  this  syrup,  wait  for  half  a  minute  and  take  out.  Sprinkle   some  chopped  pistachios  on  top  and  enjoy.
