Pistachio and berry GF, eggless chocolate chip cookies
Who can say no to Chocolate chip cookies? Mildly sweet, crunchy, garnished with the goodness of Goji berries and pistachios. The other bonuses, these are eggless and gluten free. I do not want to leave anyone behind.
I am a novice baker, hence the recipe has to be super simple. That is exactly what it is. Mix the dry ingredients and wet ingredients separately, then combine the two together.
The weather is fantastic here now. The snow is gone, birds are back and all the winter woes are forgotten. We are not wasting time at all, be it after work in a weekday, or the weekend. Sitting on the deck, walking on the trail or enjoying camping. What better snack to carry than these yummy cookies.

Recipe: 30 cookies
Gluten free flour 2 cups
Cocoa powder 3/4 cup
Baking soda 1 tsp
Salt 1/2 tsp
Ground flax seed 2 Tbsp
Water 1/2 cup
Olive oil 1 cup
Granulated sugar 2 cup
Vanilla extract 2 tsp
Chocolate chips 3/4 cup
Pistachio pieces 2 tbsp
Dried goji berries 2 tbsp
Sea salt to top the cookies
Preheat oven to 350 degrees. In a bowl combine the flour, cocoa powder, salt. Whisk them together.
In a separate small bowl add the flax seed and water. Let it sit for a minute to gel.
Now take another big bowl and combine the sugar, oil, vanilla extract. Add the flax seed water paste to this. Add the dry ingredients slowly to this. Mix till combined. Add the chocolate chips and berry pieces now. With the help of a spoon, scoop out the dough, make them into balls and flatten them into discs. Top them with pistachio pieces and some sea salt.
Seat them on a parchment paper lined baking sheet a couple inches apart. Bake them for 10-11 minutes or till the top cracks slightly. Let them cool completely and dig in!
I have used gluten flour from Robin Hood company that had Xanthum gum in it.
The recipe have been adapted from Levee Baking company with some changes.
Use 3/4 cup of olive oil to start with, adding more in increments if it feels too dry.
