Milk powder and Maltesers fudge with cardamom: Milk powder Burfi
Fudge or “burfi” is very common back home. I really love making those, as you can see here, ..here., here….
If you know me by now, you know that I am quite partial to recipes that takes less time, less ingredients, makes more in numbers…. Less work , more compliments…. You get the point.
Fudges fit my bill. Butter or Ghee, milk powder, chickpea flour, nut flour other lentil flours, a sweetening agent, some garnishes a few minutes of cooking time and voilla you can whip up a tray full of these.
When life gets busier and responsibilities pile up higher is there any other way friends?
Treat to be sent to kid’s school, parties at home, you need something yummy to return the neighbour’s bowl with, the teenager needs some snack to take along with him to his dorm, does it ever end?
Now I have given the traditional ‘Milk Burfi” a little twist. I mean as if the burfi was not enough, now add some Maltesers in it and dark chocolate to garnish!
Trust me this is the recipe that will cause “neighbour’s envy, owner’s pride”.
Here is the recipe.
Recipe; Adapted from internet with modifications.
Made 12 one inch squares.
Milk powder 1 cup
Ghee 21/2 Tbsp
Milk 1/4 cup
Icing sugar 1/4 cup
Cardamom powder 1/4 tsp
Maltesers . one 37 gm packet
Dark chocolate chips 1 Tbsp
Line a small baking try with greased wax paper.
Cut a few Maltesers in half and set aside.
In a pan take some water. Take a steel bowl which fits on the pan. Put the chocolate chips in it. Put the gas on medium. As the water starts to boil, the chocolate starts to melt. When about three quarters of the chocolate is melted, switch the gas off.
Take a non stick pan on medium low heat. Pour the ghee, wait till it melts, add the milk. Give a good stir. Add the milk powder and keep stirring so that it mixes well and is lump free. In a measuring cup keep together the icing sugar and cardamom powder. Add this to the pan and mix well. In about three to four minutes it should start to come together like a dough and leave the side of the pan. Add half of the Malteser pieces in this dough.
Put the gas off. Pour this dough in the greased tray. With a spatula smoothen the surface and clean the sides. Lift the wax paper and put it on a chopping board. Decorate the top with Maltesers and melted chocolate. Use a knife or Pizza cutter to make pieces.
Let it sit in the fridge for about 20 minutes. Collect the pieces. Store in airtight container in fridge for about a week.
