Komla lebur payesh : Orange pudding

Happy  new  year  friends.  I  feel it  is  only  natural  that  we  start  the  year  with  something  sweet.  Are  you  with  me  on  this?

It  is  citrus  season,  and  I’m  going  with  the  oranges.  Growing  up  I  have  so  many  fond  memories  of   winter  food.  Looking  back  the  winters  were  very  mild,  but  we  were  all  bundled  up  with  our  hats,  mitts,  woollen  socks  and  what  not.  Who  knew  that  I  would  settle  down  in  a  place  where  the  summer  temperatures  would  be  exactly  similar  to  the  winter  temperatures  of  my  childhood?

Winters  holidays  meant  time  spent  at  the  grandparents.  Dida  or  granma  asked  for  help  with  two  things  in  her  kitchen.  Shelling  peas  from  the  pods  and  cleaning  up  the  orange  segments  off  of  the  fascia.  Isn’t  it  funny  how  we  can  almost  associate  the  seasons  with  food.  Orange  pudding  or  Komla  lebur  payesh,  was  a  favourite  of  ours  and  Dida  obliged  us  every  time.

I  tweaked  it  a  bit,  for  there  was  no  microwave  then.  As  long  as  the  milk  is  thickened  to  a  desired  consistency  it  doesn’t  matter  if  this  is  cooked  stove  top  or  in  a  microwave  oven.

Recipe:  Serves  4.


Milk                                                                                                         1  cup

Chhena                                                                                                   1  cup

Condensed  milk                                                                                1/4  cup

Mandarin   orange  pulp                                                                 1/2  cup

Pistachio  nut  pieces                                                                       1  Tbsp

Grated  orange  rind                                                                          1/4  tsp


Peel  the  oranges  into  segments.  With  a  sharp  pair  of  scissors  cut  through  the  narrow  side  of  the  segment  to  clean  up  the  fascia.  Collect  the  pulp.

Make  Chhena,  cottage  cheese  at  home.  You  can  get  the  recipe  for  that  here.  Grate  it  and  keep  aside.

Take  the  milk  in  a  microwave  safe  bowl  and  mix  with  the  condensed  milk.  Heat  this  in  microwave,  for  3  minutes,  taking  the  bowl  out  after  every  minute  and  giving  it  a  good  stir.  The  consistency  can  be  adjusted  to  your  liking.  Some  like  it  almost  like  a  soft  fudge  consistency  others  a  bit  more  runny.   Add  the  Chhena  and  orange  rind  to  it.   Allow  it  to  cool  then  put  it  in  the  refrigerator  for  a  couple  hours.

Take  it  out  just  before serving,  add  the  orange  pulp.  Garnish  with  Pistachio  nut  pieces.  Enjoy.

Inside  scoop;

Check  the  sweetness  of  the  orange.  It  can  curdle  the  milk  if  sour.

    I really like this!!! Pudding sometimes is too sweet, but with citrus, I imagine the flavor would be so wonderful. What a great way to start a new fantastic year. xoxo
