Grilled nectarines with maple syrup, mint and chaat masala
August is such a bittersweet month. All the beautiful fruits are ready to be enjoyed, the veggies are ready to harvest, children are still on summer holidays, days are long….
It is also a time when the leaves start to change colour. The single digit temperatures reminding us of times to come.
Coming back to the present time, let us enjoy the lovely fruits. Nectarines, plums, peaches…. We are spoilt for choices. Grilling these lovely fruit releases their flavour. Add a few more flavours of your liking and you have an exquisite dessert.
I have gone fusion here. Maple syrup from “Our home and native land” and Chaat masala from India. Believe me they worked fantastic together.
Ready in no time, this is just the right dessert for that informal gathering with friends or even the ‘high tea’.
Recipe: Serves 4
Nectarines 4, cut in half and seeded
Maple syrup 1/2 cup
Brown sugar 2 Tbsps
Butter 2 Tbsps
Chopped mint leaves 1 tsp
Chaat masala 1 tsp
Lemon juice 1 tsp
Preheat the grill pan on the stove. Grill the nectarines face side down for a few minutes, turn them a quarter turn and grill for a few more minutes. This way there will be criss cross grill marks. Take care not to burn them.
In a microwave safe pan melt the butter. Put the grilled nectarines, face side down on the melted butter, such that they are greased.
Turn the face side of the nectarines up and sprinkle the brown sugar on top. Place this pan in the broiler only to get the sugar bubbly.
Take the pan out of the broiler, sprinkle the lemon juice, maple syrup and chaat masala on top.
Enjoy as is or with a scoop of your favourite ice cream.
The fruit is done pretty fast on the grill. They can burn if not careful.
