Grapefruit gazpacho with GF option.

A Gazpacho in winter?
I know. An arctic front is keeping us company that makes us the lucky benefeciaries of minus thirty celsius weather here in the prairies.
Gazpacho tastes best when it is screaming summer outside. Look at the ingredients – it is a powerhouse of antioxidants, heart healthy oils, fibers, immune-boosting vitamins from citrus, with no artificial colours, flavours or preservative. There you have it! Detox juice in a cup. That also makes it an ‘any-time-of-the-year’ kind of drink for me.
It is citrus everywhere friends. This is how I’m enjoying them. What are your plans with all the oranges, clementines, nectarines, grapefruits and such. I’d love to hear from you, leave a note for me. Happy January.
Recipe: Serves 6
Ingredients;
Grapefruit pieces 2 cups
Grapefruit juice 1 cup
Cucumber chopped 1 cup
Tomato 11/2 cup
Avocado 1 cup
Yellow pepper 1 cup
Spring onions 1/2 cup
Jalapeno pepper deseeded 1
Olive oil 1 Tbsp
Juice of 1 lemon
Salt and pepper to taste
Cilantro 1/2 cup chopped
Tortilla slivers to garnish
Method;
Make a puree of grapefruit pieces, cucumber, tomato, avocado, yellow pepper, spring onions, jalapeno pepper. Add olive oil, lemon juice to the puree.
Place the puree in a glass bowl. Add the grapefruit juice, salt and pepper. Stir well.
Let this sit in the refrigerator for an hour.
Garnish with cilantro and tortilla slivers and serve chilled. Gluten free tortilla can be used as an alternative.
