Dabeli : Spicy potato and peanuts slider
For those that frequent my blog, are familiar with my unconditional love affair with Indian street food, I would like to introduce you to this one of a kind of Burger. There is something about this exact titration of the sweet, sour, salty and hot that calls my name. This is my “Umami”.
Across the length and breadth of India there are innumerable varieties of Street foods. Using the local ingredients they come up with such concoctions, I feel drawn towards them like a fruit fly towards ripe fruits.
Dabeli is such a variety from the western state of Gujrat. It is a burger, with an attitude. The patty is done with potatoes and “Dabeli masala “, which holds the key to tantalise all the different taste buds. Then there are a couple sauces or chutneys which act as accomplices to the above.
I always stayed away from trying this at home. Too many ingredients, too much time, my excuses were many. Then one day my desire took upper hand. I had a serious urge for Dabeli. Nothing could stop me from making a master plan. Instead of starting from scratch the same day, I broke it up in small tasks. I prepared the chutneys one day, stored them in the fridge. Next evening I worked on the Dabeli masala, which stores well too. The day of, I worked on the patties, and assembled the burgers, like a pro, no sweat.
Recipe: Made 12
Boiled and mashed potatoes 5 medium
Red onion cut fine 1 big
Cilantro 1/2 cup
Roasted peanuts 1/2 cup
Pitted, chopped dates 6
Nylon sev 1/2 cup
Pomegranate seeds 1/4 cup
Dabeli masala 4 Tbsps
Hamburger buns 12
Butter 1 stick
Tamarind chutney 1/2 cup
Garlic chutney 1/2 cup
Green chutney 1/2 cup
Take 2 Tbsps of oil in a non stick pan over medium heat. Add the mashed potatoes, roasted peanuts, dabeli masala, chopped dates, onions and saute for a few minutes, until the mixture looses all moisture and comes together. Switch the gas off. Divide the mixture into 12 portions and shape them into patty.
Take a Tbsp of butter in another non stick pan and saute the buns on both the outer sides until light brown in colour.
To assemble the burger, smear the tamarind chutney on the inside of the bun, the garlic chutney on the other side. Seat the patty, and layer with nylon sev, cilantro, red onion, pomegranate seeds, green chutney.
Enjoy it while the buns are still warm.
