Chakli , Murukku, Rice and lentil flour spirals: Gluten free
Good news on the weather front. We have warmed up to a balmy minus twenty six celsius today. Remember the saying ” every little bit helps?”
Well on the other hand, tea is consumed by pot fulls with a side of yummy and crunchy snacks. Tweak the recipe if you want. Spice it up or tone it down. With only rice and lentil powder to form the dough, I even like to think it as a good source of protein. Oh Ok, I am overlooking the little bit of oil that has gone into frying these beauties.
Honestly friends the fact that it is gluten free makes it available even to those with allergies.
It is a win win.
Recipe; around 18
Rice flour 1 cup
Besan 1 cup
Ajwain/ carrom seeds 1/2 tsp
Cumin seeds 1/2 tsp
Red chilli powder 1/2 tsp
Salt to taste
Asafoetida 1/8 tsp
Oil 1/3 cup, more for frying
Water 3/4 cup, and couple more tsps
Chaat masala 2 tsps
In a bowl, take the rice flour, besan, ajwain, cumin seeds, red chilli powder, salt and asafoetida. Whisk together, add 1/3 cup oil in it. Mix together. Next add about 3/4 th cup water and work it into a dough. Add more water by spoonful if needed. The dough will not be very soft though. Rest it for half an hour. Add a spoonful of oil and knead one more time to a smooth dough.
Take a wok on medium heat with one inch deep canola oil for frying.
Divide the dough into three parts and mold it into a cylinder shape to put into the chakli maker. Fit the star tip.
Check if the oil is adequately hot by putting a pinch of the dough in it. If it rises right away the dough is ready. Press the chakli maker as per manufacturer’s instructions, and form a spiral with about three rings on a parchment paper. Lift these spirals with a spatula and carefully drop them in the oil. Do not overcrowd them. Let it cook about 6-7 minutes turning once in between.
Collect them on kitchen towel. Sprinkle chaat masala on top. Let them cool completely. It can be stored in airtight container for about two weeks.
