Besan Burfi: Chickpea flour fudge

Besan or chick pea flour is such an versatile ingredient. I think it can be used in such a variety of recipes, be it an appetiser sweet or savoury, main course or dessert. I always have Besan in my pantry. I feel so confident that even at a short notice I can whip up something yummy.


Besan being the flour from chick peas has a good protein content too. So even in dessert I like to think it is not just empty calories. At least that is my excuse to have that extra portion of dessert. Would you agree with me?

The festival season is on. We can’t do without sweets , can we?


Burfis are always such a delight to make and is very popular in my household. What is your go to dessert recipe?


Recipe: Makes about 30, half inch squares.


Besan                                                          1 cup

Ghee                                                             1/2 cup

Sugar                                                            1/2 cup

Water                                                         1/4 cup

Cardamom powder                           1/2 tsp

Almond and Pistachio pieces        2 Tbsps

Rose petals, optional                           1 tsp


Run the besan through a sieve.

Grease a baking pan and keep aside.

Take a non stick pan on medium heat. Add the Besan and ghee in it. Keep stirring until the Besan is cooked and it has changed colour,  about 25- 30 minutes. The ghee will separate from the besan at this time. Put the gas off. It is very important to stir the mixture at all times for fear of sticking to the bottom of the pan. Take the pan away from the burner.

In another pan take the water and sugar. Let the sugar melt first and then come to a boil. After about 8-9 minutes, take a drop of this syrup in a bowl, wait till it is alright to touch. When the thumb and first finger is dipped in it and taken apart there will be a thread formed. The syrup is now ready. Add the cardamom powder.

Add this syrup to the besan mixture. Add little by little and keep stirring. Be very careful as there is a tendency for this mixture to  overflow.

When mixed evenly pour this on the greased baking sheet. Garnish with nut pieces. Use an offset knife or the base of a bowl to make it smooth, and the nuts pressed into the mixture ever so slightly.

Let it cool for half hour. Garnish wit a few rose petals if you wish.  Cut in to desired size pieces either in square or diamonds.

Store in an airtight container, it stays well for a week.
